De smaak is mild, romig en licht hartig, met een rijke textuur door het eigeel. Bij verhitting worden ze stevig en krijgen ze een volle, zachte structuur afhankelijk van de bereidingswijze (gekookt, gebakken, roerei).
Hele eieren worden gebruikt in ontbijtgerechten, bakproducten, sauzen en als bindmiddel in veel recepten. Ze zijn populair omdat ze voedzaam zijn, veel eiwitten en vetten bevatten en zeer veelzijdig in de keuken zijn.
